Easy and Delicious Clean Eating Meatloaf

This recipe is simple and you will end up with a dish that is perfect for the meat eaters in your home, the picky eaters, the young eaters, and those who are health concious. You seriously won’t believe how easy this recipe is!!

 

Ingredients 

1.5 pounds of Ground Turkey

1 handfull of baby spinach washed and chopped

1/2 onion chopped

1/2 red pepper chopped

1/2 cup bran flakes (or other high fibre flake cereal)

1/3 cup unsweetened almond milk (or other milk)

1 egg

Sea salt and pepper to taste (go easy on salt – you can always add more later if necessary)

 

Preparation

  1. Pre-heat oven to 350 degrees
  2. Combine bran flakes and milk and let soak for 1/2 hour
  3. Combine all ingredients together (mix well with hands)
  4. Form into a loaf and place into a baking pan (I use a pyrex dish and it works great).
  5. Cook for 40 minutes or until cooked all the way through.
  6. Let cool a bit, slice, and serve.

 

My husband adds organic ketchup to his because he LOVES ketchup. My son and I both eat it plain. When in a rush I have skipped the spinach and red pepper and the meatloaf still turns out delicious.

 

What do I serve with the meatloaf?

The possibilities are really endless as this is such a versatile dish. You can serve a side of tossed salad, Caesar salad and quinoa , roasted vegetables and brown rice, or baked potato and sliced tomatoes with olive oil and balsamic vinegar.

 

Leftovers?

You can just pack up a serving for lunches the next day or you can spice it up a bit: use the meatloaf as the middle to a sandwich or bun lunch! Add sprouts or lettuce for an added crunch 🙂
